Christmas is that fun time of the year where all the children, including adults (like me) eagerly look forward to meeting Santa Claus for some goodies. Every year we decorate our Christmas tree and hang out our red stockings where my parents tuck in gifts for each one of us. Somethings we’d never like to grow out of and Christmas is one of them.
Being a parent we always tend to look out for some fun snacking options for our daugther, her friends and for our neices and nephews and so this time we got Jhelum Narsale, the co-founder of Snack it Fit to help us with some simple recipe for kids this Christmas.
Snack it Fit is the brainchild of two mumpreneurs, who were tired of dishing out unhealthy and oily snacks to their kids. They found that even the so called ‘healthy snacks’ available off the shelves were very high in salt and/ or laden with masala to make up for the lack of flavour. They started experimenting with recipes of snacks which their kids loved and the result was snacks such as ragi oreos, olive oil Nutella and many others.
Jhelum Narsale, used to be an HR professional until she discovered patisserie when she relocated to London. From being a self-taught patissier, she went on to train at Le Cordon Bleu in Paris and Westminster Kingsway College in London.
Anushka Jethwani, a jewellery designer, has always had a flare for cooking. Her interest became a passion after she had a baby and started experimenting with healthy snack alternatives for her son and found that most of what she made for her toddler was being actively gobbled by family and friends. Anushka and Jhelum run Snack it Fit together in Mumbai.
1. Chocolate Peanut Butter
This is the simplest and healthiest thing to make. Peanut is full of protein and good quality dark chocolate is full of antioxidants. Now here is how you can make it.
250 gms peanuts
100 gms dark chocolate
2 tbsp sugar (optional)
1 pinch salt
Method: Dry roast the peanuts. Start churning them in a mixie / food processor. It will become grainy at first. Scrape the sides and keep mixing at medium speed. Very soon it will attain breadcrumb like consistency. Keep scrapping the sides and keep mixing till it comes together and almost liquefies. It should be completely smooth and of spreadable consistency.
Now melt the chocolate in the microwave / bain marie. (If you have not melted chocolate before, I recommend that you watch a youtube video on the subject before you embark on the task). Put sugar and salt in the melted chocolate. Now mix the melted chocolate with the peanut butter and your chocolate peanut butter is ready. It makes for the most delicious dunking sauce or sandwich spread.
2. Chocolate Energy Balls
2 cups poha/ oats
1 cup peanut butter (preferably homemade)
3/4th cup sattu
1/3rd cup jaggery
1/3rd cup dark chocolat
1 pinch cinnamon
1 pinch salt
Method: Dry roast the poha. Set aside and let it cool completely.
Take poha / oats, peanut butter, sattu, cinnamon and salt in a large mixing bowl.
Melt the dark chocolate and set aside. Now melt the jaggery.
Pour the melted chocolate and the jaggery in the dry ingredients in the mixing bowl. Mix together and make small round balls. If you feel the batter is too sticky you can add some more poha/ oats to it. If you feel the batter is too dry and not coming together, add some honey to it.
Quote the balls in cacao powder or desiccated coconut or any other condiment of your choice.
3. Strawberry yogurt pot
Christmas in India coincides with the strawberry season. This is the time when strawberries from Mahabaleshwar are available aplenty. This is a simple dessert which is enjoyed by kids and adults alike, especially if the mum is pressed for time.
3-4 fresh strawberries
1 tsp sugar
1 bowl fresh yogurt
2 tbsps milkmaid
Method: Macerate the strawberries in the sugar (roughly mash the strawberries with a fork and put a spoonful of sugar on it and let it sit for half an hour)
Mix the milkmaid with the yogurt thoroughly.
Now simply mix the strawberries with the yogurt mix and serve chilled. I can assure you it’s a delight.
